- Led multi-site food safety system redesigns for major retailers, including facility flow for FSMA compliance
- Advised in designing of 3 commercial kitchens for a national sushi company in retail stores
- Conducted root cause investigation to find the source/culpable party in a foodborne outbreak that resulted in 51 people and 2 deaths at a sushi restaurant
- Acted as a trusted advisor during FDA audits (483 letters) for airline catering company for three months to learn operations, finding source of Listeria m. in zone 1, and review and provide recommendations to company food safety plan and facility design flow.
- Influenced company leadership in retail grocery to shift the culture from a reactive response to food safety crises to a preventative approach to avoid food safety crises.
- Supported several innovation projects in retail such as cold pressed juice, food trucks, in-house mozzarella production, outdoor food events, high risk products– from concept to rollout.
